Preheat your oven to 350°F (175°C).
In a skillet over medium heat, cook the sausage until browned and cooked through, about 5-7 minutes. Drain excess grease.
In a large mixing bowl, whisk together the eggs and milk. Add salt and pepper to taste.
Stir in the cooked sausage, biscuit mix, and 1½ cups of shredded cheddar cheese until combined.
Grease the 9x13 inch baking dish and pour the mixture into it, spreading evenly.
Top with the remaining ½ cup of cheddar cheese.
Bake for 30-35 minutes until the center is set and the top is golden brown.
Let it cool for 5-10 minutes before slicing and serving.
