Ingredients
  

  • 1 lb sausage your favorite type, cooked and crumbled
  • 2 cups shredded cheddar cheese divided
  • 6 large eggs
  • 1 cup biscuit mix
  • 2 cups milk whole or your preferred type
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the sausage until browned and cooked through, about 5-7 minutes. Drain excess grease.
  3. In a large mixing bowl, whisk together the eggs and milk. Add salt and pepper to taste.
  4. Stir in the cooked sausage, biscuit mix, and 1½ cups of shredded cheddar cheese until combined.
  5. Grease the 9x13 inch baking dish and pour the mixture into it, spreading evenly.
  6. Top with the remaining ½ cup of cheddar cheese.
  7. Bake for 30-35 minutes until the center is set and the top is golden brown.
  8. Let it cool for 5-10 minutes before slicing and serving.
