Ingredients

  • 12 ounces uncooked pasta any shape such as penne or rotini
  • 2 cups cooked chicken shredded or diced
  • 1 tablespoon butter
  • 8 ounces cream cheese softened
  • 3 tablespoons Frank's Red Hot Original Sauce
  • 1/2 cup chicken broth
  • 1 tablespoon ranch seasoning such as Hidden Valley
  • 1 cup shredded cheddar cheese
  • Salt & pepper to taste
  • Chopped scallions optional, for garnish

Equipment

  • Large pot
  • Skillet
  • Mixing spoon
  • Measuring cups and spoons
  • Colander

Method

  1. Begin by bringing a large pot of salted water to a boil. Add the uncooked pasta and cook according to the package instructions until al dente. Drain the pasta in a colander and set aside.
  2. In a large skillet, melt the butter over medium heat. Once melted, add the cooked chicken and let it warm through.
  3. Stir in the softened cream cheese, allowing it to melt and combine with the chicken. This will create a creamy base for your sauce.
  4. Pour in the Frank's Red Hot Original Sauce and chicken broth. Stir well to combine.
  5. Add the ranch seasoning, salt, and pepper to taste. Stir until everything is well integrated and heated through.
  6. Add the cooked pasta to the skillet, tossing to coat it evenly with the buffalo sauce.
  7. Sprinkle the shredded cheddar cheese over the pasta and stir until melted and incorporated.
  8. Remove from heat and serve immediately. If desired, garnish with chopped scallions for an added crunch and freshness.

Notes

  • Use whole wheat pasta for a healthier option.
  • Swap out Frank's Red Hot sauce for your favorite hot sauce if you prefer a different flavor.
  • For a lower-fat option, use light cream cheese.
