Ingredients
  

For the Chicken Mixture:
  • 2 cans cream of chicken (10 Ounce each)
  • 8 ounces sour cream
  • 2/3 cup milk
  • 3 cups cooked chicken (shredded)
  • 1/4 teaspoon pepper
  • 1 teaspoon Italian seasoning
For Serving:
  • Mandarin oranges (for topping)
  • Sliced olives (for topping)
  • Pineapple tidbits (for topping)
  • Green onions (sliced, for topping)
  • Shredded cheese (for topping)
  • Diced tomatoes (for topping)
  • Chow mein noodles (for topping)
For the Rice:
  • 3 cups cooked rice

Method
 

  1. In a large mixing bowl, combine the cream of chicken soup, sour cream, and milk. Stir until smooth. Then, add the shredded chicken, pepper, and Italian seasoning. Mix well until all the ingredients are thoroughly combined.
  2. Transfer the chicken mixture to a skillet over medium heat. Stir occasionally until the mixture is heated through and bubbly, about 5-7 minutes.
  3. While the chicken mixture is heating, cook your rice according to the package instructions or in a rice cooker.
  4. Prepare your toppings by placing them in small bowls. Arrange mandarin oranges, sliced olives, pineapple tidbits, green onions, shredded cheese, diced tomatoes, and chow mein noodles on your serving platter.
  5. To serve, scoop a generous portion of rice onto a plate. Top it with the creamy chicken mixture, then let everyone customize their haystack with their choice of toppings.

Notes

  • For a homemade cream of chicken soup, blend sautéed chicken, onions, and garlic with chicken broth, milk, and flour until thickened.
  • If you prefer a spicy kick, add jalapeños or hot sauce to the chicken mixture.
  • Experiment with different cheeses; pepper jack adds flavor while cheddar is classic.
  • For a vegetarian option, replace the chicken with sautéed mushrooms and add extra veggies.
