Ingredients
  

For the Granola:
  • 3 cups old-fashioned oats
  • 1 cup shredded coconut unsweetened
  • 1 cup sliced almonds or other nuts like pecans or walnuts
  • 3 tbsp honey or real maple syrup
  • 1/4 cup brown sugar
  • 1/4 cup coconut oil or extra virgin olive oil
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 cup dried cranberries or other dried fruits like raisins or apricots

Method
 

Instructions:
  1. Step 1: Preheat your oven to 325°F (160°C).
  2. Step 2: In a large mixing bowl, combine the old-fashioned oats, shredded coconut, sliced almonds, cinnamon, and salt. Stir until evenly mixed.
  3. Step 3: In a separate bowl, mix the honey (or maple syrup), brown sugar, and melted coconut oil (or olive oil) until well combined.
  4. Step 4: Pour the wet mixture over the dry ingredients. Stir thoroughly until all the oats and nuts are coated in the sticky mixture.
  5. Step 5: Line your baking sheet with parchment paper. Spread the granola mixture evenly across the sheet, pressing it down slightly to help it cluster as it bakes.
  6. Step 6: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, stirring halfway through to ensure even cooking.
  7. Step 7: Once baked, remove from the oven and let it cool for a few minutes before stirring in the dried cranberries or your choice of dried fruit.
  8. Step 8: Let the granola cool completely on the baking sheet. Transfer it to an airtight container for storage.
