Instructions:
- Step 1: Preheat your oven to 325°F (160°C).
- Step 2: In a large mixing bowl, combine the old-fashioned oats, shredded coconut, sliced almonds, cinnamon, and salt. Stir until evenly mixed.
- Step 3: In a separate bowl, mix the honey (or maple syrup), brown sugar, and melted coconut oil (or olive oil) until well combined.
- Step 4: Pour the wet mixture over the dry ingredients. Stir thoroughly until all the oats and nuts are coated in the sticky mixture.
- Step 5: Line your baking sheet with parchment paper. Spread the granola mixture evenly across the sheet, pressing it down slightly to help it cluster as it bakes.
- Step 6: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, stirring halfway through to ensure even cooking.
- Step 7: Once baked, remove from the oven and let it cool for a few minutes before stirring in the dried cranberries or your choice of dried fruit.
- Step 8: Let the granola cool completely on the baking sheet. Transfer it to an airtight container for storage.
Notes
- Toast nuts before adding for extra flavor.
- Store in an airtight container at room temperature for up to two weeks.
- Experiment with spices like nutmeg for different flavors.
- Add chocolate chips after cooling for a decadent treat.
