Ingredients
  

For the Oatmeal:
  • 2 cups 1-minute oats (quick-cooking oats, NOT instant)
  • 1.25 cups almond milk (or your favorite type of milk)
  • 0.75 cups pumpkin purée (NOT pumpkin pie filling)
  • 1 tablespoon brown sugar
  • 2 teaspoons pumpkin pie spice
  • 0.5 teaspoon kosher salt
  • 0.25 cups butterscotch baking chips
  • 0.25 cups white chocolate chips
  • 0.25 cups chopped walnuts
  • to taste Whipped topping (such as Cool Whip)

Method
 

Instructions:
  1. In a microwave-safe bowl, combine the 2 cups of 1-minute oats, 1¼ cups of almond milk, ¾ cup of pumpkin purée, 1 tablespoon of brown sugar, 2 teaspoons of pumpkin pie spice, and ½ teaspoon of kosher salt. Stir well until all ingredients are evenly mixed.
  2. Place the bowl in the microwave and cook on high for 2-3 minutes. Keep an eye on it to prevent overflow. The oatmeal should be thickened and creamy when done.
  3. Carefully remove the bowl from the microwave (it will be hot!). Stir the oatmeal to combine, then fold in the butterscotch and white chocolate chips along with the chopped walnuts.
  4. Top your oatmeal with a dollop of whipped topping, if desired. For an extra touch, sprinkle a bit more pumpkin pie spice or some additional walnuts on top. Enjoy your bowl of Easy Pumpkin Oatmeal warm!

Notes

  • For creamier oatmeal, add a splash more milk after cooking.
