Instructions:
- In a microwave-safe bowl, combine the 2 cups of 1-minute oats, 1¼ cups of almond milk, ¾ cup of pumpkin purée, 1 tablespoon of brown sugar, 2 teaspoons of pumpkin pie spice, and ½ teaspoon of kosher salt. Stir well until all ingredients are evenly mixed.
- Place the bowl in the microwave and cook on high for 2-3 minutes. Keep an eye on it to prevent overflow. The oatmeal should be thickened and creamy when done.
- Carefully remove the bowl from the microwave (it will be hot!). Stir the oatmeal to combine, then fold in the butterscotch and white chocolate chips along with the chopped walnuts.
- Top your oatmeal with a dollop of whipped topping, if desired. For an extra touch, sprinkle a bit more pumpkin pie spice or some additional walnuts on top. Enjoy your bowl of Easy Pumpkin Oatmeal warm!
