Start by melting the dark chocolate chips. You can do this in a microwave-safe bowl by heating them in 30-second intervals, stirring in between, until smooth. Alternatively, you can use a double boiler on the stove to melt the chocolate gently.
While the chocolate is melting, add the silken tofu to your blender or food processor. Blend it until it's completely smooth, scraping down the sides as needed.
Once the chocolate is melted and slightly cooled, pour it into the blender with the tofu. Add the almond milk, maple syrup, vanilla extract, and a pinch of kosher salt. Blend again until the mixture is silky and well combined.
Give your mousse a quick taste. If you prefer it sweeter, feel free to add a little more maple syrup to suit your taste.
Transfer the mousse to individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 1 hour, or until set.
