Easy Vegetarian Sloppy Joes

Ingredients
  

  • 2 tablespoons olive oil (extra virgin)
  • 3 cloves garlic (minced)
  • 1 unit yellow onion (chopped)
  • 1 unit green bell pepper (chopped)
  • 2 cups red lentils (cooked, 1 cup dried)
  • 15 ounce canned black beans (drained and rinsed)
  • 2 tablespoons chili powder
  • 1 bunch green onions (finely chopped)
  • 6 unit whole wheat hamburger buns
  • 15 ounce canned tomato sauce
  • 3/4 cup chili sauce
  • 3 tablespoons maple syrup
  • 2 tablespoons soy sauce (low sodium)
  • 2 teaspoons smoked paprika

Equipment

Method
 

  1. Rinse 1 cup of red lentils under cold water. In a pot, combine with 3 cups of water, bring to a boil, then simmer for about 15 minutes until tender. Drain excess water and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic, chopped onion, and green bell pepper, and sauté for about 5-7 minutes until soft.
  3. Add cooked lentils, drained black beans, and chopped green onions to the skillet. Stir to combine.
  4. Sprinkle in 2 tablespoons of chili powder and 2 teaspoons of smoked paprika. Pour in the canned tomato sauce and chili sauce, stirring until evenly coated.
  5. Add 3 tablespoons of maple syrup and 2 tablespoons of low-sodium soy sauce. Stir well and let simmer for about 5 minutes.
  6. Spoon the mixture onto whole wheat hamburger buns and serve immediately while warm, garnished with additional green onions if desired.

Notes

  • Leftovers can be stored in an airtight container in the fridge for up to 4 days.
  • This dish can be prepared ahead of time and reheated before serving.
  • Feel free to substitute lentils with green or brown lentils if needed.
