Stepwise Method:
- Gather all your ingredients on the counter. Make sure your edamame is shelled and cooked, and your chickpeas are drained and rinsed. Fresh basil should be washed, and garlic cloves peeled.
- In a food processor, combine the shelled cooked edamame, garbanzo beans, garlic, and fresh basil. Pulse a few times until the mixture is roughly chopped.
- Add the lemon juice, salt, and freshly cracked pepper to the food processor. Pulse again to combine.
- While the food processor is running, slowly drizzle in the extra-virgin olive oil. This will help emulsify the mixture and create a creamy texture. Scrape down the sides as necessary.
- Taste the hummus and adjust seasoning as needed. If it’s too thick, add a little water or more olive oil until you reach your desired consistency.
