Start by washing and cutting your cauliflower head into bite-sized florets.

Dip each cauliflower floret into the egg, allowing excess to drip off, then roll in the breadcrumb mixture, pressing gently to adhere.
Preheat your air fryer to 400°F (200°C). Lightly spray the basket with avocado oil cooking spray. Arrange breaded cauliflower in a single layer, spraying tops lightly.
Air fry the cauliflower for about 12-15 minutes, shaking the basket halfway through.
Transfer cooked cauliflower to a mixing bowl and drizzle with buffalo sauce. Toss to coat evenly.
Serve immediately with your favorite dipping sauce.
