Ingredients
  

For the Dough:
  • 4 3/4 cups bread flour (576g)
  • 2 1/2 teaspoons kosher salt (14g)
  • 1 1/2 teaspoons granulated sugar or honey (8g)
  • 2 teaspoons instant yeast (5g)
  • 2 cups warm water (454g) (90F to 110F)
  • 2 1/2 tablespoons extra-virgin olive oil (30g)
  • Extra virgin olive oil For drizzling on top and greasing the pan.
  • Flaky sea salt A finishing touch that adds texture and bursts of flavor.
  • Fresh rosemary sprigs coarsely chopped (optional)

Build Focaccia Step by Step
  1. Step 1: Prepare the Dough - In a large mixing bowl, combine the bread flour, kosher salt, sugar or honey, and instant yeast. Make a well in the center and pour in the warm water and olive oil. Use a wooden spoon or spatula to mix until a sticky dough forms.
  2. Step 2: Knead and Rise - Cover the bowl with a kitchen towel or plastic wrap and let the dough rise in a warm place for about 1 to 2 hours, or until it has doubled in size.
  3. Step 3: Shape the Dough - Drizzle some extra virgin olive oil onto your baking sheet or pan. Transfer the risen dough onto the oiled surface and gently stretch it to fit the pan, being careful not to deflate it too much.
  4. Step 4: Create Dimples - Using your fingers, make deep dimples all over the surface of the dough. This will help hold onto the olive oil and toppings.
  5. Step 5: Add Toppings - Drizzle more extra virgin olive oil over the top of the dough, sprinkle flaky sea salt, and add fresh rosemary if desired. You can also experiment with other toppings like olives, sun-dried tomatoes, or caramelized onions.
  6. Step 6: Second Rise - Cover the dough again and let it rise for another 30 minutes to 1 hour.
  7. Step 7: Bake - Preheat your oven to 425°F (220°C). Once the dough has risen, place it in the oven and bake for 20 to 25 minutes, or until golden brown.
