Ingredients
  

  • 3 pounds chicken wings separated
  • 2 tablespoons Cajun seasoning
  • 2 large eggs
  • 1/4 cup low-fat milk
  • 2 dashes hot sauce
  • 2 tablespoons cornstarch
  • 2 cups all-purpose flour
  • 1 teaspoon seasoning salt
  • 3 cups vegetable oil for frying

Method
 

  1. Begin by rinsing the chicken wings under cold water and patting them dry with paper towels.
  2. In a large mixing bowl, combine the chicken wings, Cajun seasoning, eggs, low-fat milk, and hot sauce. Mix well to ensure all wings are coated. Allow the wings to marinate for at least 30 minutes.
  3. In another bowl, whisk together the cornstarch, all-purpose flour, and seasoning salt.
  4. In your deep fryer or heavy pot, heat the vegetable oil to 350°F (175°C).
  5. Remove the wings from the marinade, allowing any excess liquid to drip off. Dredge each wing in the flour mixture, ensuring they are well coated.
  6. Carefully place the coated wings into the hot oil, a few at a time to avoid overcrowding. Fry for about 8-10 minutes or until they are golden brown and cooked through.
  7. Once all the wings are fried, serve them hot with your favorite dipping sauces.
