Frittata Instructions:
- Step 1: Preheat your oven to 375°F (190°C). Spray your oven-safe skillet with cooking spray to ensure the frittata doesn’t stick.
- Step 2: In your prepared skillet, heat the olive oil over medium heat. Add the chopped sweet potatoes and cook for about 5-7 minutes, stirring occasionally, until they start to soften. Next, add the red bell pepper and broccoli. Continue cooking for an additional 5 minutes, stirring in the garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook until the vegetables are tender.
- Step 3: In a large bowl, whisk together the eggs and heavy cream until well combined. Stir in the sharp Cheddar cheese, Swiss cheese, and Parmesan cheese. This mixture will create a creamy and cheesy filling for your frittata.
- Step 4: Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to ensure the vegetables are evenly distributed. Cook on the stovetop for about 3-5 minutes, just until the edges start to set.
- Step 5: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and the top is golden brown. You can check for doneness by inserting a knife; it should come out clean.
- Step 6: Once baked, remove the frittata from the oven and let it cool for a few minutes. Slice it into wedges and serve warm or at room temperature.
