Ingredients
  

For the Frittata:
  • 3 cups chopped sweet potatoes peeled and diced
  • 1 large red bell pepper thinly sliced into strips
  • 2 cups chopped broccoli about 2 florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1-1/2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 4 large eggs
  • 1-1/3 cups heavy cream
  • 1 cup sharp Cheddar cheese
  • 1 cup Swiss cheese
  • 1/3 cup freshly grated Parmesan cheese

Method
 

Frittata Instructions:
  1. Step 1: Preheat your oven to 375°F (190°C). Spray your oven-safe skillet with cooking spray to ensure the frittata doesn’t stick.
  2. Step 2: In your prepared skillet, heat the olive oil over medium heat. Add the chopped sweet potatoes and cook for about 5-7 minutes, stirring occasionally, until they start to soften. Next, add the red bell pepper and broccoli. Continue cooking for an additional 5 minutes, stirring in the garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook until the vegetables are tender.
  3. Step 3: In a large bowl, whisk together the eggs and heavy cream until well combined. Stir in the sharp Cheddar cheese, Swiss cheese, and Parmesan cheese. This mixture will create a creamy and cheesy filling for your frittata.
  4. Step 4: Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to ensure the vegetables are evenly distributed. Cook on the stovetop for about 3-5 minutes, just until the edges start to set.
  5. Step 5: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and the top is golden brown. You can check for doneness by inserting a knife; it should come out clean.
  6. Step 6: Once baked, remove the frittata from the oven and let it cool for a few minutes. Slice it into wedges and serve warm or at room temperature.
