Start by washing and chopping the cauliflower into small florets.
In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until fork-tender.
Once cooked, drain the cauliflower in a colander and allow it to sit for a few minutes to remove excess water.
While the cauliflower is draining, heat a small pan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
In a food processor, combine the drained cauliflower, sautéed garlic, low-fat cream cheese, and salted butter. If using rosemary, add it now. Blend until smooth and creamy.
Taste the mixture and adjust the seasoning as needed. Add salt, pepper, or more garlic as preferred.
Transfer the Garlic Mashed Cauliflower to a serving bowl and garnish with additional rosemary if desired. Serve warm and enjoy!
