Preparation Steps
- Step 1: Prepare the Baking Dishes. Preheat your oven to 375°F (190°C). Butter your soufflé dishes generously, covering the sides and bottom. Dust each dish with sugar, tapping out the excess.
- Step 2: Mix the Cheese Base. In a medium mixing bowl, combine the full-fat cream cheese and fresh goat cheese. Blend until smooth.
- Step 3: Add the Egg Yolks. Add the egg yolks to the cheese mixture, one at a time, mixing well after each addition. Add the grated lemon zest and a pinch of salt, mixing until well combined.
- Step 4: Whip the Egg Whites. In a clean, dry bowl, whip the egg whites until they form stiff peaks.
- Step 5: Fold the Mixtures Together. Gently fold a third of the whipped egg whites into the cheese mixture to lighten it, then fold in the remaining egg whites in two additions.
- Step 6: Fill the Soufflé Dishes. Spoon the soufflé mixture into the prepared dishes, filling them about three-quarters full.
- Step 7: Bake. Place the filled soufflé dishes onto a baking sheet and bake for 20-25 minutes or until the tops are golden brown and puffed.
- Step 8: Serve Immediately. Remove the soufflés from the oven and serve immediately.
