Preparation Steps
  1. Step 1: Prepare the Baking Dishes. Preheat your oven to 375°F (190°C). Butter your soufflé dishes generously, covering the sides and bottom. Dust each dish with sugar, tapping out the excess.

  3. Step 3: Add the Egg Yolks. Add the egg yolks to the cheese mixture, one at a time, mixing well after each addition. Add the grated lemon zest and a pinch of salt, mixing until well combined.
  4. Step 4: Whip the Egg Whites. In a clean, dry bowl, whip the egg whites until they form stiff peaks.
  5. Step 5: Fold the Mixtures Together. Gently fold a third of the whipped egg whites into the cheese mixture to lighten it, then fold in the remaining egg whites in two additions.
