Ingredients
  

  • 1 cup light brown sugar packed
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 cup salted dry-roasted peanuts chopped
  • 6 cups cornflakes
  • 1 cup semisweet chocolate chips

  • 9x13-inch Baking Dish
  • Double boiler or microwave-safe bowl
  • Parchment paper

Method
 

  1. Line a 9x13-inch baking dish with parchment paper, allowing some overhang on the sides for easy removal later.
  2. In a large mixing bowl, combine the packed light brown sugar and light corn syrup. Stir until the mixture is smooth and well combined.
  3. Add the creamy peanut butter to the bowl and mix until fully incorporated. The mixture should be thick and creamy.
  4. Gently fold in the chopped salted dry-roasted peanuts and cornflakes. Be careful to keep the cornflakes intact for that delightful crunch.
  5. Transfer the mixture to the prepared baking dish. Use a spatula to press it down evenly, ensuring it’s compact.
  6. In a double boiler or microwave-safe bowl, melt the semisweet chocolate chips until smooth. If using a microwave, heat in 30-second intervals, stirring in between to avoid burning.
  7. Pour the melted chocolate over the pressed mixture in the baking dish. Use your spatula to spread it evenly across the top.
  8. Place the baking dish in the refrigerator for at least two hours to allow the bars to set properly.
  9. Once set, lift the bars out of the baking dish using the parchment overhang. Slice into squares or rectangles and enjoy your homemade Goody Goody Bars!

Notes

  • Store leftovers in an airtight container at room temperature for up to a week.
  • For longer storage, freeze the bars tightly wrapped in plastic wrap.
  • Use natural peanut butter for a healthier option.
