Ingredients
  

  • 1 cup creamy cookie butter
  • 1/2 cup light brown sugar (packed)
  • 1/3 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 1/4 cup molasses (not black strap)
  • 1 cup plus 1 all-purpose flour (not packed)
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 4 ounces semi-sweet chocolate (chopped into chunks)
  • 2 ounces semi-sweet chocolate (chopped into chunks, for topping)
  • Flaky sea salt (for sprinkling)

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: Grease your 9x9 inch baking pan or line it with parchment paper.
  3. Step 3: In a large mixing bowl, combine cookie butter, brown sugar, and granulated sugar. Mix until smooth. Add vanilla, egg, egg yolk, and molasses; whisk until well combined.
  4. Step 4: In another bowl, whisk together flour, cinnamon, and salt. Gradually add to wet ingredients, stirring until just combined.
  5. Step 5: Fold in chopped semi-sweet chocolate until evenly distributed.
  6. Step 6: Pour the batter into the prepared baking pan and spread evenly. Bake for about 25-30 minutes or until edges are golden.
  7. Step 7: Sprinkle chopped chocolate on top immediately after removing from the oven. Cool for 10 minutes before transferring to a cooling rack. Sprinkle with flaky sea salt after cooling.

Notes

  • Store bars in an airtight container at room temperature for up to 3 days.
  • For longer storage, refrigerate for up to a week or freeze for up to 3 months.
  • Using room temperature cookie butter will make mixing easier.
