Ingredients
  

For the Quesadillas:
  • 1/2 lb. leftover chicken or turkey shredded
  • 1 can diced green chiles (4 oz.) drained
  • 2 oz. cream cheese softened
  • 8 pieces Mission Carb Balance tortillas
  • 1 cup grated mozzarella cheese
  • 2 tsp. olive oil for brushing the pan
  • to taste Sour cream for serving (optional)
  • to taste Salsa for serving (optional)

Method
 

Step-by-Step Instructions:
  1. In a mixing bowl, combine the shredded chicken or turkey, drained diced green chiles, and softened cream cheese. Mix until all ingredients are well incorporated.
  2. Lay out four tortillas on a clean surface. Evenly distribute the chicken mixture over each tortilla, followed by a generous sprinkle of grated mozzarella cheese. Top with the remaining tortillas.
  3. Heat a non-stick skillet over medium heat and lightly brush it with olive oil. Carefully place one quesadilla in the skillet. Cook for about 3-4 minutes on each side or until golden brown and the cheese is melted.
  4. Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Slice each quesadilla into wedges and serve warm with sour cream and salsa on the side.

  • Ensure your cream cheese is at room temperature for easy mixing.
  • Experiment with different cheese types for added flavor!
  • For extra crunch, add chopped green onions or corn to the filling.
