Ingredients
  

For the Brownies:
  • 2 large eggs
  • 1/2 cup salted butter melted (1 stick)
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 15 regular mint Oreo cookies crushed
For the Frosting:
  • 4 ounces cream cheese softened
  • 1/2 cup butter softened, salted
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Green food coloring gel food coloring
  • 5 regular mint Oreo cookies for decoration
  • 2 teaspoons red heart sprinkles

Method
 

Directions:
  1. Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, white sugar, eggs, and vanilla extract until well combined and smooth.
  3. In another bowl, sift together the flour, cocoa powder, and salt. Gradually add the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix.
  4. Gently fold in the crushed mint Oreo cookies into the brownie batter, ensuring they are evenly distributed.
  5. Pour the brownie mixture into the prepared baking pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.
  6. In a mixing bowl, beat together the softened cream cheese and softened butter until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth. Add green food coloring to achieve your desired shade of green.
  7. Once the brownies are completely cool, spread the green frosting evenly on top.
  8. Crush the remaining mint Oreo cookies and sprinkle them on top of the frosting along with the red heart sprinkles for a festive touch.

Notes

  • Store leftover brownies in an airtight container in the refrigerator for up to a week.
  • Freeze brownies tightly wrapped in plastic wrap for up to three months.
