Ingredients
  

  • 1 pound Ground beef lean
  • 2 medium Zucchini spiralized into noodles
  • 1 cup Peanut sauce creamy
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Greek oregano
  • 1 teaspoon Dried parsley
  • 1 teaspoon Dried mint
  • to taste Salt
  • to taste Fresh ground black pepper

Method
 

  1. Using a spiralizer, turn the zucchini into noodles. Set them aside.
  2. In a large skillet, heat a splash of oil over medium heat. Add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  3. Once the beef is cooked, add in the garlic powder, ground cumin, Greek oregano, dried parsley, and dried mint. Season with salt and fresh ground black pepper to taste. Stir well to combine, allowing the spices to toast slightly for about a minute.
  4. Pour in your creamy peanut sauce, stirring to coat the beef evenly. Let it simmer for a few minutes until the sauce is heated through.
  5. Add the zucchini noodles to the skillet. Toss everything together gently, ensuring the noodles are well-coated with the peanut sauce. Cook for an additional 2-3 minutes or until the zucchini noodles are just tender but still have a bit of a bite.
