Ingredients
  

  • 1 pound small carrots (with part of greens still intact)
  • 2 teaspoons harissa powder (see note)
  • 2 teaspoons olive oil (for roasting carrots)
  • 1 tablespoon olive oil (for the bean mixture)
  • 1 clove garlic (minced)
  • 1 cup cooked Great Northern beans (drained and rinsed if using canned)
  • ½ cup chopped fresh cilantro and flat-leaf parsley
  • 1 tablespoon lemon juice
  • 3 tablespoons toasted pepitas

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C). A hot oven will help caramelize the carrots beautifully.
  2. Step 2: Wash the small carrots thoroughly, leaving some greens intact for presentation. Pat them dry and place them on the baking sheet.
  3. Step 3: In a small bowl, mix together the 2 teaspoons of olive oil and 2 teaspoons of harissa powder. Drizzle this mixture over the carrots and toss until they are evenly coated.
  4. Step 4: Spread the carrots out on the baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until they are tender and starting to caramelize, tossing halfway through for even cooking.
  5. Step 5: While the carrots are roasting, heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  6. Step 6: In a mixing bowl, combine the cooked Great Northern beans, sautéed garlic, chopped cilantro, parsley, and lemon juice. Gently toss to combine and season with salt and pepper to taste.
  7. Step 7: Once the carrots are done roasting, remove them from the oven and allow to cool slightly. Serve the roasted carrots alongside the bean mixture, garnishing with toasted pepitas for an extra crunch. Enjoy your Harissa Roasted Carrots with White Beans warm or at room temperature!

Notes
