Ingredients

For the Muffins:
  • 3 whole very ripe bananas mashed
  • 1/2 cup pure maple syrup
  • 1/2 cup whole milk Plain Greek Yogurt
  • 1 large egg
  • 1/2 cup whole milk
  • 1/4 cup melted unsalted butter
  • 2 teaspoons vanilla extract
  • 1 1/2 cups white whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips divided

Equipment

  • Mixing bowls
  • Whisk
  • Muffin tin
  • Parchment paper or muffin liners
  • Measuring cups and spoons

Method

Instructions:
  1. Step 1: Preheat Your Oven
Start by preheating your oven to 350°F (175°C). This ensures that your muffins will bake evenly.
  2. Step 2: Prepare Your Muffin Tin
Line a muffin tin with parchment paper or muffin liners. This will make it easy to remove the muffins once they’re baked.
  3. Step 3: Mix the Wet Ingredients
In a large mixing bowl, combine the mashed bananas, pure maple syrup, whole milk Greek yogurt, egg, whole milk, melted butter, and vanilla extract. Whisk until everything is well combined and smooth.
  4. Step 4: Combine the Dry Ingredients
In another bowl, whisk together the white whole wheat flour, cocoa powder, baking soda, baking powder, and salt. This step ensures that the leavening agents are evenly distributed throughout the flour.
  5. Step 5: Combine Wet and Dry Mixtures
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  6. Step 6: Fold in Chocolate Chips
Gently fold in 1/2 cup of chocolate chips into the batter, saving the remaining 1/4 cup for topping the muffins.
  7. Step 7: Fill the Muffin Tin
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the remaining chocolate chips on top of each muffin for an extra touch of decadence.
  8. Step 8: Bake
Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Step 9: Cool and Enjoy
Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy these delightful Healthy Chocolate Banana Muffins warm or at room temperature!

Notes

  • For a dairy-free version, substitute Greek yogurt with coconut or almond yogurt.
  • Use almond, soy, or oat milk instead of whole milk for a plant-based option.
  • To make them gluten-free, replace white whole wheat flour with a gluten-free flour blend.
