Healthy Pop Tarts

Ingredients
  

  • 1 batch Greek yogurt dough
  • 2 tablespoons sugar adjust based on preference
  • 1/2 cup strawberry jam or any jam of your choice
  • 2 tablespoons milk for icing
  • 1/2 cup powdered sugar for icing
  • 2 tablespoons Greek yogurt for icing
  • 1/2 teaspoon vanilla extract for icing

  • Cookie cutter or knife
  • Mixing bowl

Method
 

  1. In a mixing bowl, combine your Greek yogurt dough ingredients. Mix until a soft dough forms, adding flour if too sticky.
  2. Flour your work surface and roll out the dough to about 1/4 inch thickness in a rectangular shape.
  3. Using a cookie cutter or knife, cut the dough into rectangles, needing two for each pop tart.
  4. Spoon a generous amount of strawberry jam onto half of the rectangles, leaving space around the edges. Top with the other rectangles.
  5. Use a fork to press down the edges of the pop tarts to seal in the filling.
  6. Preheat your oven to 350°F (175°C). Place the pop tarts on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown.
  7. While baking, whisk together powdered sugar, milk, Greek yogurt, and vanilla extract until smooth for icing.
  8. Once baked and slightly cooled, drizzle the icing over the pop tarts. Let it set before enjoying.

Notes

  • Store baked pop tarts in an airtight container at room temperature for up to three days.
  • Freeze for longer storage; they last up to three months in the freezer.
  • Reheat in a toaster or microwave for warm pop tarts.
