Ingredients
  

For the Gnocchi:
  • 2 cups potatoes peeled and diced
  • 1 tsp salt
  • 1 tsp cayenne pepper
  • 1 cup tarragon finely chopped
  • 2 tbsp olive oil for cooking and flavor
  • 1 cup shredded parmesan
  • 1 cup plain flour
  • 1 each egg yolk
  • 2 tbsp olive oil for sautéing
  • 1 pinch shredded parmesan for serving

Method
 

Instructions
  1. Step 1: Boil the Potatoes - Place the diced potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. Step 2: Mash the Potatoes - Use a potato masher to mash the cooled potatoes until smooth. Avoid over-mashing.
  3. Step 3: Combine the Ingredients - In a mixing bowl, combine mashed potatoes, salt, cayenne pepper, tarragon, olive oil, shredded parmesan, and egg yolk. Gradually add plain flour to form a soft dough.
  4. Step 4: Knead the Dough - Transfer dough to a floured surface and knead gently for about 2-3 minutes.
  5. Step 5: Shape the Gnocchi - Roll dough into ropes about ½ inch thick and cut into 1-inch pieces. Press with a fork to create ridges.
  6. Step 6: Cook the Gnocchi - Bring salted water to a gentle boil and drop in gnocchi in batches. Cook until they float, about 2-3 minutes. Remove with a slotted spoon.
  7. Step 7: Sauté the Gnocchi - In a large pan, heat 2 tablespoons of olive oil over medium heat. Sauté gnocchi for 3-5 minutes until golden and crispy. Serve immediately with shredded parmesan.

Notes

  • Use starchy potatoes for the best texture.
  • Don’t over-knead the dough; it should be light and tender.
  • Experiment with different herbs for variety.
  • If the dough is too sticky, add more flour as needed.
