- Step 1: Boil the Potatoes - Place the diced potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.

- Step 3: Combine the Ingredients - In a mixing bowl, combine mashed potatoes, salt, cayenne pepper, tarragon, olive oil, shredded parmesan, and egg yolk. Gradually add plain flour to form a soft dough.
- Step 4: Knead the Dough - Transfer dough to a floured surface and knead gently for about 2-3 minutes.
- Step 5: Shape the Gnocchi - Roll dough into ropes about ½ inch thick and cut into 1-inch pieces. Press with a fork to create ridges.
- Step 6: Cook the Gnocchi - Bring salted water to a gentle boil and drop in gnocchi in batches. Cook until they float, about 2-3 minutes. Remove with a slotted spoon.
- Step 7: Sauté the Gnocchi - In a large pan, heat 2 tablespoons of olive oil over medium heat. Sauté gnocchi for 3-5 minutes until golden and crispy. Serve immediately with shredded parmesan.
