Method
 

  1. Start by heating your skillet over medium heat. Add the breakfast sausage, breaking it up with a wooden spoon as it cooks. Sauté until it's browned and cooked through, about 5-7 minutes.
  2. Once the sausage is fully cooked, add the tablespoon of unsalted butter to the skillet. Stir it in until melted, combining it with the sausage for added flavor.
  3. Sprinkle the flour over the sausage mixture. Stir well to coat the sausage evenly. You'll want to cook this for about a minute to eliminate the raw flour taste, stirring constantly.
  4. Gradually add the whole milk to the skillet, whisking continuously to blend it with the flour and sausage. This will help prevent any lumps from forming.
  5. Continue to cook the mixture over medium heat, stirring frequently until the gravy thickens, about 5-10 minutes. If it becomes too thick, you can add a bit more milk to reach your desired consistency.
  6. Taste the gravy and season with salt and pepper as needed. Once seasoned to your liking, remove it from heat and serve it hot over freshly baked biscuits or your favorite breakfast items.
