Ingredients

For the Wings:
  • 4 pounds chicken wings fresh
  • 4 tablespoons unsalted butter melted
  • 2.5 tablespoons sesame oil
  • 3 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon crushed red pepper flakes for a kick
  • 1 teaspoon fresh ginger finely grated
  • 3 cloves garlic minced
  • 0.5 cup honey
  • 0.25 cup Sriracha sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon cornstarch
  • 2 teaspoons sesame seeds for garnish
  • 0.25 cup fresh scallions chopped, for garnish

Equipment

  • Baking sheet
  • Aluminum foil
  • Mixing bowl
  • Whisk
  • Meat thermometer

Method

Instructions:
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken wings dry with paper towels and place them in a large mixing bowl.
  3. In a separate bowl, combine the melted butter, sesame oil, garlic powder, kosher salt, and black pepper. Drizzle this mixture over the chicken wings and toss to coat evenly.
  4. Spread the wings in a single layer on the lined baking sheet. Bake for 30-35 minutes, flipping halfway through, until golden brown and crispy.
  5. In a saucepan over medium heat, melt 4 tablespoons of unsalted butter. Add the crushed red pepper flakes, ginger, and minced garlic, sautéing until fragrant, about 1 minute.
  6. Stir in the honey, Sriracha sauce, Worcestershire sauce, balsamic vinegar, lime juice, and cornstarch. Bring to a simmer, stirring until thickened, about 3-5 minutes.
  7. Toss the baked wings in the honey garlic sauce until thoroughly coated.
  8. Transfer to a serving platter and garnish with sesame seeds and chopped scallions. Serve immediately.

Notes

  • For extra crispiness, ensure wings are patted dry before seasoning.
  • Feel free to adjust the spice level by altering Sriracha and red pepper flakes.
  • If the sauce thickens too much, add a splash of water before serving.
