Ingredients

  • 2.5 pounds chicken wings separated into two pieces
  • 2 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 2 teaspoons kosher salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 0.5 cup hot sauce

Equipment

  • Large Mixing Bowl
  • Baking sheet
  • Wire Rack
  • Meat thermometer
  • Oven

Method

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, kosher salt, black pepper, paprika, garlic powder, and onion powder. Mix well.
  3. Add the chicken wings to the bowl with the dry mixture. Toss the wings until they are thoroughly coated.
  4. Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the coated wings in a single layer on the wire rack.
  5. Bake the wings in the preheated oven for about 40-45 minutes, flipping them halfway through.
  6. While the wings are baking, combine the hot sauce in a small bowl.
  7. Once the wings are done baking, transfer them to a clean mixing bowl and pour the hot sauce over them. Toss until evenly coated.
  8. Serve your hot wings immediately with your favorite dipping sauce.

Notes

  • For extra crispiness, ensure wings are well-coated and bake on a wire rack.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Grill or smoke wings for a different flavor.
