Ingredients

  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 8 ounces cream cheese at room temp
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 10 dashes Tabasco sauce
  • 1/2 teaspoon kosher salt
  • to taste freshly ground black pepper
  • 2 scallions thinly sliced

Equipment

  • Mixing bowl
  • Electric mixer or whisk
  • Spatula
  • Serving dish
  • Measuring cups and spoons

Method

  1. Start by draining the oil from the sun-dried tomatoes and chopping them into small pieces. This will help them distribute evenly throughout the dip.
  2. In a mixing bowl, beat the cream cheese with an electric mixer until it’s smooth and creamy. This step is crucial for a silky dip, so take your time!
  3. To the cream cheese, add the sour cream, mayonnaise, chopped sun-dried tomatoes, Tabasco sauce, kosher salt, and black pepper. Mix until everything is well combined.
  4. Carefully fold in the sliced scallions to give the dip a fresh flavor and crunch.
  5. For the best flavor, cover the dip and let it chill in the refrigerator for at least an hour before serving. This helps the flavors meld together beautifully.

Notes

  • Feel free to add diced olives for a briny kick.
  • Incorporate grated Parmesan cheese for an extra cheesy flavor.
  • Try using your favorite hot sauce instead of Tabasco to customize the heat level.
