  • 6 medium Beets preferably organic
  • 1 cup Water

  1. Start by rinsing the beets under cold water to remove any dirt. Use a vegetable peeler to peel the skin off the beets. If your beets are large, you can cut them into halves or quarters to ensure even cooking.
  2. Pour 1 cup of water into the Instant Pot. This water will create the steam necessary for cooking the beets.
  3. Arrange the prepared beets in the Instant Pot. You can use a steamer basket or place them directly in the pot. If you're stacking them, ensure they are not overcrowded to allow even cooking.
  4. Close the lid of the Instant Pot and set it to “Sealing.” Use the manual setting to cook the beets based on their size: Small beets (1-2 inches): 15 minutes; Medium beets (2-3 inches): 20 minutes; Large beets (3-4 inches): 25-30 minutes.
  5. Once the cooking time is up, perform a quick release by carefully turning the vent to “Venting.” Be cautious of the steam that will escape.
  6. Remove the lid and use a fork or knife to check if the beets are tender. If they're not quite done, you can seal the lid again and cook for an additional 5 minutes.
  7. Once cooked, transfer the beets to a colander and let them cool slightly. If you didn’t peel them before cooking, the skin should now slip off easily.

Notes

  • Cook and store beets in an airtight container in the refrigerator for up to a week.
  • Slice or dice the cooked beets for easy incorporation into salads or bowls.
  • You can also freeze cooked beets for future use. Just make sure to slice them before freezing for easier thawing.
