Cooking Steps:
- Step 1: Prepare the Chicken. If using fresh chicken thighs, pat them dry with paper towels. If they’re frozen, you can cook them straight from the freezer.
- Step 2: Season the Chicken. Mix together the salt and pepper. Rub this seasoning all over the chicken thighs.
- Step 3: Sauté the Chicken. Turn your Instant Pot to the “Sauté” function and add the oil. When hot, place the chicken thighs skin-side down and brown for about 5-7 minutes.
- Step 4: Add Liquid. Remove the chicken thighs and pour in your choice of liquid, scraping the bottom of the pot.
- Step 5: Cook the Chicken. Place the chicken thighs back into the pot, skin-side up. Secure the lid, set the valve to “Sealing,” and cook for 12 minutes for fresh thighs or 15 minutes for frozen thighs.
- Step 6: Natural Release. Let the pressure release naturally for 10 minutes, then switch the valve to “Venting” to release remaining pressure.
- Step 7: Serve and Enjoy! Check if the chicken has reached an internal temperature of 165°F, then serve hot with your favorite sides.
