Ingredients
  

  • 2 cups shredded mozzarella cheese
  • 2 oz full-fat cream cheese
  • 1.5 cups almond flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp butter
  • 2-3 cloves garlic, minced
  • 1 tbsp minced parsley or Italian seasoning
  • 0.5 cup parmesan or cheddar cheese optional, for topping

Method
 

  1. Start by melting the mozzarella and cream cheese together in a microwave-safe bowl for about 30 seconds, then stir. Repeat until fully melted and combined.
  2. In a separate bowl, combine the almond flour, baking powder, garlic powder, and Italian seasoning. Whisk until well mixed.
  3. Once the cheese mixture is ready, add the dry ingredients to the cheese. Crack in the eggs and mix until a dough forms. Knead slightly if needed.
  4. In a small skillet, melt the butter over medium heat. Add minced garlic and parsley, sauté until fragrant (about 1-2 minutes). Pour into the dough and mix thoroughly.
  5. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Scoop portions of the dough and shape them into small balls, placing them on the baking sheet.
  6. If desired, sprinkle the tops of the rolls with parmesan or cheddar cheese for an extra cheesy crust.
  7. Bake the rolls in the preheated oven for 15-20 minutes, or until golden brown and puffed up. Avoid over-baking.
  8. Remove from the oven, let cool for a few minutes, and serve warm. Enjoy!
