Ingredients
  

  • 1 cup desiccated coconut (unsweetened)
  • 1 cup almond pieces
  • 1 cup other nuts (crushed, I used walnuts and pecans)
  • 1 cup sunflower seeds
  • 1 cup pumpkin seeds
  • 1 cup flaxseed (ground/milled)
  • 1 cup peanut butter (unsweetened)
  • 2 tablespoons granulated sweetener (optional)
  • 1 tablespoon cinnamon
  • 1/3 cup water

Method
 

  1. Preheat your oven to 350°F (175°C). This will ensure your granola bakes evenly and gets that perfect golden-brown color.
  2. Line a baking sheet with parchment paper. This will help prevent the granola from sticking and make cleanup a breeze.
  3. In a large mixing bowl, combine the desiccated coconut, almond pieces, crushed nuts, sunflower seeds, pumpkin seeds, and ground flaxseed. Stir the mixture until everything is evenly distributed.
  4. In a separate bowl, mix the peanut butter, granulated sweetener (if using), cinnamon, and water. Stir well until you have a smooth mixture.
  5. Pour the peanut butter mixture into the bowl with the dry ingredients. Stir until everything is thoroughly coated and mixed well.
  6. Transfer the granola mixture to the prepared baking sheet. Spread it out evenly, pressing it down slightly to help it clump together during baking.
  7. Bake the granola in the preheated oven for 15-20 minutes, stirring halfway through. Keep an eye on it to prevent burning; you want it golden and fragrant.
  8. Once baked, remove the granola from the oven and let it cool completely on the baking sheet. Once cooled, break it into clusters and store it in an airtight container.

Notes

  • Store the granola in an airtight container at room temperature for up to two weeks.
  • If you want to keep it longer, you can store it in the fridge for up to one month.
  • For longer storage, consider freezing the granola in a freezer-safe bag or container for up to three months.
