Method
 

  1. In a mixing bowl, combine the soy sauce, maple syrup, rice vinegar, minced garlic, minced ginger, gochujang, sesame oil, and kosher salt. Whisk everything together until well combined.
  2. Add the chicken wings to the marinade, ensuring each wing is coated evenly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. Preheat your air fryer to 380°F (193°C).
  4. Remove the wings from the marinade and place them in a single layer in the air fryer basket.
  5. Cook the wings for 25-30 minutes, flipping them halfway through to ensure even cooking.
  6. Remove the wings from the air fryer and let them rest for a few minutes. Serve hot, garnished with chopped green onions and sesame seeds.
