  1. Step 1: Prepare Your Ingredients - Start by dicing your potatoes and finely chopping the onion. Thinly slice the leftover prime rib.
  2. Step 2: Cook the Potatoes - In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the diced potatoes, season with salt and black pepper, and cook until golden brown and crispy, about 10-15 minutes.
  3. Step 3: Sauté the Onions - Once the potatoes are crispy, push them to one side of the skillet. Add the remaining tablespoon of butter and the diced onion. Sauté until translucent and fragrant, about 3-4 minutes.
  4. Step 4: Add the Prime Rib - Add the thinly sliced leftover prime rib to the skillet. Stir everything together and cook for another 2-3 minutes.
  5. Step 5: Cook the Eggs - In a separate small pan, cook the eggs to your liking—sunny-side up, fried, or poached.
  6. Step 6: Assemble and Serve - Serve the hash on plates and top each serving with a perfectly cooked egg. Garnish with freshly chopped parsley.
