For the Fermentation:
  • 2-3 medium Fresh lemons preferably organic
  • 2-3 inches Fresh ginger peeled and thinly sliced
  • 1 cup Raw honey or more, depending on the size of your jar

Method
 

Preparation Steps:
  1. Start by washing the lemons and ginger thoroughly. Slice the lemons into thin rounds, removing any seeds you find along the way. Peel the ginger and slice it into thin pieces as well.
  2. Place the lemon and ginger slices in your clean glass jar, layering them as you go. Aim for an even distribution of both ingredients for a balanced flavor.
  3. Pour in enough raw honey to completely cover the lemon and ginger slices. The honey should rise above the contents, ensuring everything is submerged to prevent mold.
  4. Using a spoon, stir the mixture gently but thoroughly to release any trapped air bubbles beneath the slices.
  5. Secure the lid tightly on the jar and place it in a warm spot in your kitchen, away from direct sunlight.
  6. Every day, remember to 'burp' the jar by briefly opening the lid to release any gases that build up during fermentation.
  7. After about 5-7 days, your Lemon Fermented Ginger Honey should be ready. Taste it to see if it meets your flavor preference.
