Preparation Steps:
- Step 1: Prepare the Chicken - Preheat your oven to 375°F (190°C). Pound chicken breasts to an even thickness, about 1/2 inch.
- Step 2: Seasoning - Mix 1 teaspoon of Italian seasoning, 1/2 teaspoon of onion powder, and a pinch of salt. Rub this mixture over the chicken breasts.
- Step 3: Prepare the Coating - Whisk together the eggs, minced garlic, 1/2 teaspoon of Italian seasoning, a pinch of salt, and cracked pepper. Combine almond flour and Parmesan cheese in a separate bowl.
- Step 4: Dredge the Chicken - Dip each chicken breast in the egg mixture, then coat with the almond flour and Parmesan mixture.
- Step 5: Cook the Chicken - Heat olive oil and butter in a skillet over medium-high heat. Cook coated chicken for about 3-4 minutes on each side until golden brown.
- Step 6: Assemble - Spread a thin layer of marinara sauce in a baking dish. Place browned chicken on top, pour remaining sauce, and sprinkle mozzarella cheese on top.
