  • 1 cup half and half or heavy cream
  • 1/2 cup milk whole or 2%
  • 1/4 cup vegetable oil or canola, avocado, or olive oil
  • 2 teaspoons vanilla extract
  • 2 large eggs slightly beaten
  • 1 cup Lucky Charms cereal scooped with marshmallows

Method
 

  1. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, combine the half and half, milk, vegetable oil, vanilla extract, and beaten eggs. Stir until well mixed.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Gently fold them together until just combined.
  4. Gently fold in the Lucky Charms cereal, ensuring that they are evenly distributed throughout the batter.
  5. Heat your griddle or frying pan over medium heat and lightly grease it if necessary.
  6. Pour about 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for an additional 2-3 minutes until golden brown.
  7. Stack your fluffy pancakes high, and serve them warm with syrup and additional Lucky Charms on top!
