Ingredients
  

  • 6 oz blueberries
  • 1 tablespoon pure maple syrup
  • 1 cup Quaker Old Fashioned Oats
  • 1 3/4 cups unsweetened vanilla almond milk or your milk of choice
  • 1/3 cup chopped almonds
  • 2 teaspoons chia seeds
  • Additional maple syrup for serving, if desired

Method
 

  1. Step 1: Preheat the oven to 375°F (190°C).
  2. Step 2: In an oven-safe baking dish, combine the blueberries and maple syrup. Toss gently, spread in a single layer, and roast for 15-20 minutes.
  3. Step 3: In a medium saucepan, combine oats and almond milk. Bring to a boil, then reduce heat and simmer for about 5 minutes.
  4. Step 4: Stir in chia seeds and chopped almonds.
  5. Step 5: Divide oatmeal into bowls and top with roasted blueberries and additional maple syrup if desired.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat with a splash of almond milk for creaminess.
  • For freezing, store the base oatmeal without toppings for up to 2 months.
