Ingredients
  

  • 1 tablespoon olive oil
  • 1/4 cup red onion minced
  • 2 cloves garlic minced
  • 2 cups cooked brown rice
  • 2 roma tomatoes diced small
  • 2 cups baby spinach fresh
  • 1/2 cup fat-free feta cheese crumbled

Method
 

  1. In a large skillet, heat the 1 tablespoon of olive oil over medium heat. Let it warm up until shimmering.
  2. Add the 1/4 cup minced red onion and sauté for about 2 minutes until it becomes translucent. Then, add the 2 minced garlic cloves and cook for an additional minute, stirring frequently to prevent burning.
  3. Once the onions and garlic are fragrant, add the 2 cups of cooked brown rice to the skillet. Stir it well to combine with the aromatics and heat through.
  4. Add the 2 diced roma tomatoes and 2 cups of fresh baby spinach to the skillet. Stir everything together and let it cook for about 3-4 minutes until the spinach wilts and the tomatoes soften.
  5. Remove the skillet from heat and sprinkle the 1/2 cup crumbled fat-free feta cheese over the top. Gently fold it into the rice mixture to combine all the flavors beautifully.
  6. Serve the Mediterranean Fried Rice warm, garnished with a little extra feta if desired. Enjoy this vibrant dish as a main course or a side!

Notes
