  • 1 tablespoon organic mixed bean sprouts

  1. 1. Prepare the Mixed Bean Salsa: Chop the red bell pepper, jalapeno, and red onion into fine pieces. In a large mixing bowl, combine the minced vegetables with the sweet corn, lime juice, and chopped coriander. Add the organic mixed bean sprouts and season with salt and pepper to taste. Toss everything together until evenly mixed and set aside.
  2. 2. Warm the Tortillas: In a skillet over medium heat, warm the large tortillas one at a time for about 30 seconds on each side, or until they are pliable and slightly toasted.
  3. 3. Assemble the Taco Bowls: Gently press each warmed tortilla into a bowl shape. Fill each tortilla bowl generously with the mixed bean salsa you prepared earlier.
  4. 4. Serve and Enjoy: Garnish your taco bowls with extra coriander or a squeeze of lime if desired. Serve immediately and enjoy!
