  • 2/3 cup breadcrumbs
  • 1/2 cup onion, chopped
  • 1 tablespoon barbecue sauce

  • 1/2 teaspoon garlic powder
  • 1.5 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 egg lightly beaten
  • 1/3 cup light brown sugar
  • 1/2 cup ketchup
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon ground nutmeg

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C). This will ensure your mini meatloaves cook evenly.
  2. Step 2: In a large mixing bowl, combine the lean ground beef, breadcrumbs, chopped onion, barbecue sauce, mustard, garlic powder, chili powder, salt, pepper, and the beaten egg. Use your hands or a spatula to mix everything until just combined—be careful not to overmix, as this can make the meatloaf tough.
  3. Step 3: If using a muffin tin, lightly grease it. Form the meat mixture into small loaves, about the size of your palm, and place them in the muffin tins or a greased loaf pan.
  4. Step 4: In a separate bowl, mix together the ketchup, light brown sugar, Dijon mustard, and ground nutmeg. This mixture will create a delicious glaze for your mini meatloaves.
  5. Step 5: Spoon the glaze over the tops of each mini loaf. Bake in the preheated oven for about 25-30 minutes or until the internal temperature reaches 160°F (70°C).
