Ingredients

  • 6 oz semisweet chocolate chips melt beautifully
  • 2 large eggs whole
  • 2 large egg yolks extra for richness
  • 1/4 cup sugar for sweetness
  • 1/4 tsp salt enhances chocolate flavor
  • 1 tsp vanilla extract adds aromatic touch
  • 3 Tbsp all-purpose flour for structure

Method
 

  1. Preheat your oven to 425°F (220°C) for a perfect molten center.
  2. Grease each ramekin with unsalted butter and dust with flour.
  3. In a microwave-safe bowl, combine butter and chocolate chips. Heat in 30-second intervals until melted and smooth.
  4. In a mixing bowl, whisk together eggs, yolks, sugar, salt, and vanilla until combined. Gradually add melted chocolate, stirring continuously.
  5. Gently fold in flour until just combined; do not overmix.
  6. Evenly distribute the batter among the prepared ramekins, filling each about 3/4 full.
  7. Place ramekins on a baking tray and bake for 12-14 minutes, or until edges are set but the center is still soft.
  8. Remove from oven, cool for a minute, run a knife around edges, and invert onto a plate. Serve immediately.

Notes

  • For gluten-free, substitute all-purpose flour with a gluten-free blend.
  • For dairy-free, use dairy-free chocolate and coconut oil instead of butter.
  • Store leftovers in an airtight container in the fridge for up to two days.
