Ingredients
  

  • 2 cups quick cooking oats
  • 1 cup creamy peanut butter
  • 3 tablespoons maple syrup
  • 1 cup vanilla protein powder optional
  • 1/2 cup mini semi-sweet chocolate chips
  • 1/2 cup mini M&Ms

Method
 

  1. In a large mixing bowl, combine the quick cooking oats, vanilla protein powder (if using), mini semi-sweet chocolate chips, and mini M&Ms. Stir until well mixed.
  2. Add the creamy peanut butter and maple syrup to the dry mixture. Using a spoon or spatula, mix everything together until fully combined. The mixture should be sticky but manageable.
  3. With clean hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture has been shaped into energy balls.
  4. Place the formed energy balls onto a baking sheet or plate lined with parchment paper. Refrigerate for at least 30 minutes to help them firm up.
  5. Once chilled, your Monster Cookie Energy Balls (No Bake!) are ready to enjoy! Store any leftovers in an airtight container in the fridge for up to a week.
