  • 1 tablespoon extra virgin olive oil
  • 8 ounces mixed sliced mushrooms (such as baby bella, shiitake, or oyster; avoid white button mushrooms for a richer flavor)
  • ½ teaspoon kosher salt
  • 1 large clove garlic thinly sliced
  • 1 tablespoon chopped fresh thyme leaves
  • ½ cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven to 475°F (245°C) to ensure a hot baking environment, which is key for a crispy crust.
  2. Step 2: If you’re using homemade whole wheat pizza dough, roll it out on a floured surface until it reaches your desired thickness. Transfer the rolled dough onto a pizza stone or a baking sheet lined with parchment paper.
  3. Step 3: In a medium skillet, heat the extra virgin olive oil over medium heat. Add the sliced mushrooms and season with kosher salt. Sauté for about 5-7 minutes until the mushrooms are tender and have released their moisture.
  4. Step 4: Stir in the thinly sliced garlic and chopped fresh thyme to the sautéed mushrooms. Cook for an additional 2-3 minutes until the garlic is fragrant but not burnt. Remove the skillet from heat.
  5. Step 5: Spread the pizza sauce evenly over the dough, leaving a small border for the crust. Sprinkle the sautéed mushroom mixture over the sauce, followed by the shredded mozzarella cheese and a generous sprinkle of grated Parmesan cheese.
