Method
 

Instructions:
  1. Preheat your oven to 350°F (180°C). This ensures your cookies will bake evenly.
  2. In a medium bowl, whisk together the cake flour, bread flour, baking soda, baking powder, and coarse salt.
  3. In a large mixing bowl, cream together the unsalted butter, packed light brown sugar, and granulated sugar using a stand mixer or hand mixer on medium speed until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the pure vanilla extract until combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.
  6. Using a spatula, gently fold in the bittersweet chocolate disks until evenly distributed throughout the dough.
  7. Using a cookie scoop, portion out the dough onto a prepared baking sheet lined with parchment paper.
  8. If you like, lightly sprinkle sea salt on top of each cookie before baking.
  9. Bake the cookies for 10-12 minutes, or until the edges are golden brown but the centers still look slightly underbaked.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
