Instructions:
- Preheat your oven to 350°F (180°C). This ensures your cookies will bake evenly.
- In a medium bowl, whisk together the cake flour, bread flour, baking soda, baking powder, and coarse salt.
- In a large mixing bowl, cream together the unsalted butter, packed light brown sugar, and granulated sugar using a stand mixer or hand mixer on medium speed until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the pure vanilla extract until combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.
- Using a spatula, gently fold in the bittersweet chocolate disks until evenly distributed throughout the dough.
- Using a cookie scoop, portion out the dough onto a prepared baking sheet lined with parchment paper.
- If you like, lightly sprinkle sea salt on top of each cookie before baking.
- Bake the cookies for 10-12 minutes, or until the edges are golden brown but the centers still look slightly underbaked.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a deeper flavor, consider browning the butter before mixing.
- Let the dough chill for at least 30 minutes before baking for a thicker cookie.
- Experiment with different types of chocolate for varied flavors.
