Ingredients

  • 2 cups quick oats A great source of fiber that helps keep you full.
  • 1/2 cup mini chocolate chips For that sweet, chocolatey goodness.
  • 2/3 cup unsweetened coconut flakes Adds a chewy texture and tropical flavor.
  • 1/2 cup peanut butter Creamy and full of protein.
  • 1/2 cup honey Acts as a natural sweetener and binding agent.
  • 1 teaspoon vanilla extract Enhances the overall flavor.
  • 1 tablespoon ground flaxseed Offers omega-3 fatty acids and fiber.
  • 1 tablespoon chia seeds Packed with nutrients and adds a nice crunch.
  • 1/4 teaspoon salt Balances the sweetness and enhances flavors.

Equipment

  • Mixing bowl
  • Spatula
  • Measuring cups and spoons
  • Baking Sheet or Plate
  • Parchment Paper (optional)

Method

  1. In a large mixing bowl, combine the quick oats, mini chocolate chips, coconut flakes, ground flaxseed, chia seeds, and salt. Stir them together until evenly distributed.
  2. Next, add the peanut butter, honey, and vanilla extract to the dry mixture.
  3. Using a spatula, mix everything together until well combined. The mixture should be sticky and hold together when pressed. If it seems too dry, you can add a little more honey or peanut butter.
  4. Once the mixture is well combined, use your hands to roll small portions into bite-sized balls, about 1 inch in diameter. Place them on a baking sheet or plate lined with parchment paper.
  5. Refrigerate the energy bites for at least 30 minutes to help them firm up. This step is essential for achieving the perfect texture.
  6. After chilling, your No Bake Chocolate Chip Energy Bites are ready to be enjoyed! Store them in an airtight container in the refrigerator for up to a week.
