Ingredients
  

For the Crust:
  • 20 cookies Oreo cookies (crushed)
  • 2 tablespoons unsalted butter (melted)
For the Cream Cheese Layer:
  • 8 ounces cream cheese (softened)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 18 ounce whipped topping
  • 1 cup mini chocolate chips
For the Chocolate Pudding Layer:
  • 1 box instant chocolate pudding mix (approximately 3.4 ounce)
  • 1.5 cups nonfat milk
  • 5-7 drops green food coloring
For Topping:
  • to taste mini chocolate chips or crushed cookies

Method
 

  1. Start by crushing the 20 Oreo cookies into fine crumbs. Combine the Oreo crumbs with the melted butter in a mixing bowl until well mixed. Press this mixture firmly into the bottom of a 9x13 inch baking dish to form an even crust.
  2. In a separate mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add the granulated sugar, vanilla extract, and peppermint extract, mixing until combined. Gently fold in half of the whipped topping and ½ cup of mini chocolate chips until the mixture is smooth and creamy.
  3. Spread the cream cheese mixture evenly over the Oreo crust in the baking dish. Use a spatula to smooth the top for an even layer.
  4. In another bowl, whisk together the instant chocolate pudding mix and nonfat milk until thickened, about 2 minutes. Pour this pudding mixture over the cream cheese layer and spread it out evenly.
  5. In another bowl, fold the remaining whipped topping with the green food coloring until you achieve your desired minty hue. Gently spread this minty whipped topping over the chocolate pudding layer.
  6. Sprinkle the additional mini chocolate chips or crushed Oreo cookies over the top of the mint layer for an extra crunch and garnish.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for the best results. When ready to serve, slice into squares and enjoy the refreshing taste of your No-Bake Mint Chip Lush!
