No-Bake Nutty Cookies (Without Oats!)

These No-Bake Nutty Cookies are a quick and delicious treat packed with protein and healthy fats!

Ingredients
  

For the Cookies:
  • 1 cup unsweetened creamy peanut butter or almond butter
  • 5 tablespoons unsalted butter
  • ½ cup honey or pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 4 tablespoons cocoa powder
  • Pinch sea salt
  • 2 cups raw almonds or mixed nuts, chopped
  • ½ cup chocolate chips (optional)

Method
 

Directions:
  1. Step 1: Melt the Butter
    In a medium saucepan over low heat, melt the unsalted butter until it’s completely liquid. Be sure to stir occasionally to prevent burning.
  2. Step 2: Combine Ingredients
    Once melted, remove the saucepan from heat and add the creamy peanut butter or almond butter, honey or maple syrup, pure vanilla extract, cocoa powder, and a pinch of sea salt. Stir until the mixture is smooth and well combined.
  3. Step 3: Add the Nuts
    Next, fold in the chopped raw almonds or mixed nuts until they are evenly distributed throughout the mixture. If you're using chocolate chips, add them at this stage as well.
  4. Step 4: Form the Cookies
    Using a tablespoon or cookie scoop, portion out the mixture onto a cookie sheet lined with parchment paper. Use your hands to shape them into rounds if desired.
  5. Step 5: Chill to Set
    Refrigerate the cookies for at least 30 minutes, or until they are firm and set. This will help them hold their shape when you enjoy them!

Notes

  • Use natural nut butters for the healthiest option.
  • Store in an airtight container in the fridge for up to one week.
  • Feel free to customize with your favorite nuts or sweeteners!
