Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar (100g)
  • 1 tsp pure vanilla extract
  • 1 large egg at room temperature
  • 1 1/2 cups oat flour (175g)
  • 1/2 tsp ground cinnamon (optional)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup chocolate chips (170g)

Method
 

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. Cream together the butter and brown sugar until light and fluffy.
  3. 3. Mix in the vanilla extract and egg until well combined.
  4. 4. In a separate bowl, whisk together the oat flour, baking powder, baking soda, sea salt, and cinnamon.
  5. 5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. 6. Fold in the chocolate chips until evenly distributed.
  7. 7. Scoop rounded balls of dough onto a baking sheet, spacing about 2 inches apart, and bake for 10-12 minutes.
  8. 8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Store cookies in an airtight container for up to a week.
  • Freeze unbaked dough for up to 3 months; no need to thaw before baking.
  • Try adding a pinch of sea salt on top for a sweet-and-salty twist!
