Ingredients
  

For the Chicken and Broccoli:
  • 1 lb boneless skinless chicken breasts or tenders (about 4 breasts)
  • 1/2 cup Italian-style bread crumbs
  • 1/4 cup Parmesan cheese
  • 1 Juice and zest of lemon
  • 1 whole lemon (sliced)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons melted butter or oil
  • 2 cups broccoli florets
  • Cooking spray or oil (for drizzling)

Method
 

Instructions:
  1. Preheat your oven to 400°F (200°C) to ensure even baking.
  2. In a mixing bowl, combine the Italian-style bread crumbs, Parmesan cheese, garlic powder, Italian seasoning, lemon juice, and lemon zest. Stir until well mixed.
  3. Pat the chicken breasts dry with paper towels. Dip each piece into the melted butter or oil, allowing excess to drip off, then coat thoroughly in the breadcrumb mixture.
  4. Line a rimmed baking sheet with parchment paper or lightly grease it with cooking spray. Place the coated chicken breasts on one side of the pan.
  5. On the other side of the baking sheet, arrange the broccoli florets. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  6. Place lemon slices over the chicken and broccoli for extra flavor while baking.
  7. Bake in the preheated oven for about 25-30 minutes, or until chicken is cooked through and broccoli is tender.
  8. Once done, take the pan out of the oven and let it rest for a few minutes. Serve warm, garnishing with any extra lemon zest if desired.

  • Store leftovers in an airtight container for up to 4 days.
