Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 cup sour cream
  • 1 large egg
  • 1/4 cup freshly squeezed orange juice
  • zest from 1 orange
  • 1 cup powdered sugar sifted
  • 1/8 cup freshly squeezed orange juice for glaze
  • 1/2 tablespoon orange zest for glaze

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Line a 12-cup muffin tin with paper liners or grease it lightly.
  3. Step 3: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Step 4: In a medium bowl, whisk the melted butter, sour cream, egg, orange juice, and zest until smooth.
  5. Step 5: Pour the wet ingredients into the dry ingredients and gently fold together.
  6. Step 6: Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  7. Step 7: Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Step 8: While baking, whisk together the powdered sugar, orange juice, and zest for the glaze.
  9. Step 9: Cool muffins slightly before glazing with the orange mixture.

Notes
